- 3 cups of wheat flour
- 1 natural pineapple
- 2 teaspoons of baking soda and 1 of salt
- 1/2 teaspoon yeast and 2 cinnamon
- 3 teaspoons of nutmeg
- 3 eggs
- 1 and 3/4 cups sugar
- 1 cup of extra virgin olive oil
- 2 teaspoons vanilla powder
- 2 cups coarsely grated zucchini
- 1 cup of chopped walnuts and 50 g of butter
1 First we preheat the oven to 175 ° C. Meanwhile we will spread the two bread molds with butter.
2- In a container we pour the baking soda, the wheat flour, the yeast, the salt, the cinnamon and the nutmeg. We mix it all up.
3- Next, we take the mixer and beat the 3 eggs at medium speed for 1 minute. Add the sugar and continue beating for another minute. Then we add 2 teaspoons of vanilla and the olive oil. We beat until the mixture has a thick and foamy consistency. We remove the mixture and pour it into a large container.
4- We cut our pineapple into small pieces, mix it together with the grated zucchini and walnuts, and add all the ingredients to the mixture that we previously prepared. We beat the whole mixture by hand.
5- Once all the ingredients are incorporated, divide the mixture equally between two rectangular baking molds. Bake for 50 minutes.
6- We wait for it to cool and that's it! We already have our delicious nut cake.
